Omelet pan

I have fond memories of my dad making fluffy souffle-style omelettes in this pan. It’s hinged in the middle so that you can start it opened on the stove (as shown), then close it up and finish in the oven. Sadly, eggs can upset my stomach these days so I don’t get to use it very often, but we’re due for a lazy rainy weekend so today I figured I would risk it.
