{"id":6,"date":"2009-01-02T16:06:16","date_gmt":"2009-01-02T16:06:16","guid":{"rendered":"http:\/\/blog.parkercat.org\/doug365\/2009\/01\/02\/january_2\/"},"modified":"2009-01-02T16:06:16","modified_gmt":"2009-01-02T16:06:16","slug":"january_2","status":"publish","type":"post","link":"https:\/\/blog.parkercat.org\/doug365\/2009\/01\/02\/january_2\/","title":{"rendered":"January 2"},"content":{"rendered":"<p>On this, the Friday after New Years Day, I did not do a lot&#8230; with Lis at work I ran some errands, got some things done around the house, and did some cooking.&nbsp; Just after Thanksgiving our local Whole Foods had turkey wings on sale for $0.29\/lb, which we bought and froze.&nbsp; I also recently read in <i><a href=\"http:\/\/www.amazon.com\/Food-Cooking-Science-Lore-Kitchen\/dp\/0684800012\">On Food and Cooking<\/a><\/i> how certain vegetables (potatoes chief among them) can be induced to develop a &#8220;persistent firmness&#8221; by a low-temperature pre-cooking step (130-140 F for 20-30 minutes).&nbsp; So these things, combined with today&#8217;s cold &amp; overcast weather, provided a perfect opportunity to make a turkey stew.&nbsp; And here it is:<\/p>\n<p><span class=\"mt-enclosure mt-enclosure-image\"><a href=\"http:\/\/www.parkercat.org\/doug_project_365\/assets_c\/2009\/01\/DCL_1999-17.html\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.parkercat.org\/doug_project_365\/assets_c\/2009\/01\/DCL_1999-thumb-512x340-17.jpg\" alt=\"DCL_1999.JPG\" class=\"mt-image-none\" height=\"340\" width=\"512\" \/><\/a><\/span><\/p>\n<div>Roasted the wings, removed &amp; reserved the good meat, and made stock from the rest. Thickened the stock with a roux, and added potatoes, carrots, and turnip given the firming treatment.&nbsp; Seasoned with salt, fresh sage, dried thyme, and the garlic cloves from the stock.
